Oriental Yeast Co. Ltd., of the Nisshin Flour Milling Group, has recently published a booklet entitled "Basic Bread Doughs developed by Chef Kurata of Daisy and Chef Kimura of Maison Kaiser for Professional Bakers".

It introduces doughs of many kinds of breads such as French bread, brioche, pastry, etc. All the doughs introduced in the booklet are mixed with raw yeast, and the booklet also introduces varieties of bread items that can be baked from the introduced doughs.
